Kombucha with sideritis and magnolia

This non-alcoholic drink is a kombucha brewed with Greek mountain tea and magnolia blossoms. Furthermore I added some ground ivy. I created this drink to pair with the menu of the Green Rose, also incorporating herbs used in the menu, and it was the first of many more to come!


"Catch the breeze"

Amber beer with wild hops and fruits

This is a beer I brewed with Wageningen Student Farm. It is a beer brewed with hops and fruit from the farm. Brewed with the members and meant as a refreshing drink after the working session.   

               

"Come and play in the milky night"

Barley soda with plums, flowers and herbs 

This soda was created for a more summer themed menu featuring mainly chicken. The barley gave it some body and the sweet woodruff some nice spice notes. Elderflower and plums were also added. All ingredients (except the barley) were foraged locally.


"A flower opening at dawn before remembering the sun might burn it"

Rhubarb soda with foraged herbs  

This drink is the second in the line-up. Created for a Spring themed menu I decided to keep it fresh and herbal and made a rhubarb soda fermented with ginger bug. To it I added stinging nettle and sweet woodruff. 

  

"I've always wanted to go to Thailand but I'm scared of flying"

Honeywine with thai spices

This mead was created using honey that I had recieved from a friend's father (who is a beekeeper). Using wild yeasts I created a refreshing, herbal mead with spices and herbs commonly used in Thai curry, hence the name ;)
